Hi, I’m Alice Henneman, an Extension Educator and Registered Dietitian Nutritionist, with University of Nebraska-Lincoln Extension. I ‘ve been interested in reducing wasted food for a long time. I first started writing about this topic last year on our Nebraska Extension website with an article, “14 Ways Consumers Can Reduce Food Waste.”
As a member of the eXtension i-Three Issue Corps, I am now working on a project to help consumers reduce their wasted food. Getting involved with this project has lead to several opportunities to further work on reducing consumer food waste. I was invited to be part of an Agriculture Is America Twitter Town Hall on this topic. I also was accepted to present a peer-reviewed poster session at the Society for Nutrition Education and Behavior national meeting on “Incorporating Methods of Reducing Potential Wasted Food into Recipes to Reach Consumers at a Teachable Moment.” Recently, I completed, with another dietitian, a PowerPoint on reducing consumer food wastes that will be used by dietitians nationwide.
